Albert Franch Sunyer is the head chef and one of the co-founders and owners of Restaurant Nolla, a Helsinki-based zero-waste restaurant.
Before Nolla, Albert gained experience cooking in many renowned and Michelin starred restaurants around the world like Angle, Abac and Olo, just to name a few. While working in the kitchens of various restaurants, Albert found his passion for cooking and especially for pastry, but it also opened his eyes to the big problem of waste that is part of the industry.
Passionate about responsibility and with the aim to make the industry more sustainable, Albert together with his colleagues Luka Balac and Carlos Henriques came with the idea of a zero waste restaurant. Restaurant Nolla opened in 2018 showing that great food can go hand in hand with sustainability.
The event will be moderated by Anna Kotaviita, Press Officer at the Consulate General of Finland in St Petersburg.
The event is organized by The Finnish Institute in St. Petersburg together with the Consulate General of Finland in St. Petersburg.
The lecture is part of Nordic Weeks festival, which takes place in St. Petersburg from September 10 to October 10, 2021.
